The best discussion I have heard about the line about being perfect as your heavenly Father is perfect is that this most directly refers to being merciful. For us to forgive with perfection as God does. And you are absolutely correct, IMHO, that we are all sinners and cannot achieve the perfection of being sinless. Even when trying to be merciful. But that is why God sent His only Son to us. So that, while we strive for perfection, we have the model of forgiveness in Jesus who paid the ultimate price for us.

One thing that kind of bothers me is the last sentence in the gospel reading.
“So be perfect, just as your heavenly Father is perfect.”
We are all sinners and we can strive to be perfect but we will always fall short. One cannot even have a thought or sudden urge or going with our human nature without sinning.
I understand our “prize – the THEN” is not of this world and in the end we will see have to rely on God’s mercy for eternal salvation.
Lord have mercy on me a sinner.
